Yi Mien Soup with Mackerel and Cucumber

Sarah dislikes the taste of fresh cucumber; therefore, I’ve cook it in soup together with her favourite Yi Mien.

I also fried the mackerel lightly in order to get rid of its fishy taste.

Luckily Sarah did not aware it was cucumber and keeps munching it. I guess she loves its crumbly texture together with the fish and noodle.

Simple yet delicious. Did Sarah drink the soup too?...

Soup is always her favourite. She will normally feed herself with soup and I will feed her with noodles.

Another Yi Mien fan.

Ken Wooi:
Ya, I have not much option than doing that way. But I will still tell her that she is eating a cucumber.

John loves fresh cucumber so much, it was out of my expectation. He will grab and eat if he saw it. Yesterday, he ate lots of Japanese style pickled cucumber (without vinegar).

Btw, I like stir-fried cucumber with omelette, not sure if you have tried it. My mom always cooked it her way... heat oil, fry shallot and garlic, pour in beaten eggs (add bit of light soy sauce) and make omelette. Cook until lightly browned, then add in peeled and sliced cucumber. Cook until cucumber is soften or changed colour. Add some water and seasoning. Bring to boil, turn the heat off. Ready.

You can add in some prawns or sliced fillet. Very tasty with rice or porridge.

Is it? John is a good boy, he loves fresh cucumber. So you do not have prob with intro the food to him.
Maybe he has used to eating it in sushi?
I never tried stir-fried cucumber with omelette, it is something new to me.
I love cucumber a lot but not my husband. But definitely appreciate the menu. Taste good to me.

Actually I never put cucumber in his sushi. He picked up cucumber when we had chicken rice at KFC. He did not want the chicken, but ate only cucumber.

Since then, he never rejected cucumber. He will ask for it if he saw it on the table. All of us like cucumber now, but I seldom buy cos cannot last long in the fridge. I do marketing once a week... :D

KFC has chicken rice in their menu? I did not know it. I just ate it last week but never noticed. Hehe.
Must try next time.
It is good too that John loves vege than meat.:-)
Ya, is true. Cucumber only last for several days, or else it will turned lembik. Not nice anymore.
I also do my sundry shopping once a week.
